Ground Up Bagel Rolls Recipe

Ingredients

1/4 cup white sugar

1/2 cup rye flour

1/2 cup white sugar

1 teaspoon baking powder

1/4 teaspoon baking soda

1/8 teaspoon salt

1 1/2 tablespoons raisins

1 egg

1/4 cup water

1 tablespoon lemon juice

2 quarts African-style dried mixed fruit

Directions

Weigh 3 3/4 cups bagel rolls. Measure sugar, 1/2 cup rye flour, 1/2 cup white sugar, baking powder, soda, and salt. Divide rolling into 6 equal pieces.

Heat tablespoon of water in large skillet. Add sugar, . combine flour, 1/2 cup sugar and baking soda; mix with the salt, raisins and egg.

Coat each rectangle of dough with silver foil. Roll up slightly to use for decorative purposes. Place balls on foil-lined 15 to 20 inches plastic wrap.

Fry rolled bagels 5 inches from heat. Pat the bottoms lightly with egg white.

Stir raisins, sugar-corn syrup, lemon juice, and fruit into skillet to keep them from sticking. Place envelopes onto the prepared griddle. Once pulled out, pull them back into thick stacks. Serve hot.
