1 (9 inch) pie crust, baked
1/3 cup butter, melted
1 cup white sugar
1 tablespoon lemon zest
1 (8 ounce) package cream cheese
1 cup packed light brown sugar
1 cup all-purpose flour
1 teaspoon baking soda
1 cup chopped fresh spinach
Preheat oven to 350 degrees F (175 degrees C). Butter a 9 inch pie pan.
In a large bowl, cream together the butter, white sugar, lemon zest and cream cheese. Mix in the brown sugar, flour, baking soda and chopped spinach until smooth. Pour mixture into pie crust.
Bake in preheated oven for 50 minutes, or until toothpick inserted in center comes out clean. Cool for 10 minutes, then cool completely before cutting into squares.
