1 1/2 cups brown sugar
1/3 cup butter, softened
2 egg whites
1 (19.5 ounce) package white cake mix
1 cup vanilla extract
3/4 cup vegetable oil
3 cups all-purpose flour
1 1/4 cups chopped roasted almonds
1 cup flaked coconut
Preheat oven to 350 degrees F (175 degrees C). Line cookie sheets with foil.
In a mixing bowl beat together 1 cup brown sugar, butter, egg whites, cake mix and vanilla extract. Stir in flour until everything pulls together. Pour into cookie sheets and sprinkle evenly with chopped almonds.
Bake 12 to 14 minutes in the preheated oven. Cool for 1 minute on baking sheet before removing from cookie sheets. Let cookies stand for 5 minutes before removing from cookie sheet to cool completely.
