1 cup warm milk
1/2 cup nonfat dry milk
3 egg whites
1 cup white sugar
1 teaspoon vanilla extract
1/2 teaspoon salt
Preheat oven to 300 degrees F (150 degrees C). Lightly grease muffin cups or line with paper muffin liners.
In a large bowl, whip milk until smooth, about 1 minute; place a few tablespoons of hot milk into each muffin cup. Pour milk into prepared muffin cups, pressing into the bottom and sides of the cup.
Bake in preheated oven for 8 to 10 minutes or until a toothpick inserted into a muffin comes out clean. Let stand while preparing muffin.
In a large bowl, beat egg whites with sugar and vanilla until soft peaks form. Gradually add salt to the whites, continuing to beat until all egg whites form stiff peaks. Pour into prepared muffin cups.
Bake in preheated oven for 13 to 15 minutes, or until a toothpick inserted into a muffin comes out clean.
