1 cup long grain white rice
3 cups water
1/2 cup olive oil
3 tablespoons honey, divided
1 egg, cooked and cooled
1 cup soft boiled egg
1/2 cup frozen whipped topping, thawed
1/2 teaspoon lemon juice
1 1/2 tablespoons white sugar
1/2 teaspoon salt
3 tablespoons soy sauce
1 teaspoon vanilla extract
1 tablespoon dry bread crumbs
1/4 cup raisins
Preheat oven to 425 degrees F (220 degrees C). Lightly grease a 2 quart glass lettered bowl. In a small mixing bowl, combine rice, water, oil, egg, salt, 1/2 cup of frozen whipped topping, 2 leaves of lemon and chocolate or double cream, if desired. Stir together and pour into bowl.
Mix together the raisins, remaining 2 tablespoons of frozen whipped topping, lemon juice and 1/2 teaspoon of sugar, mix well. Pour mixture into prepared mold and shape into loaf loaf.
Bake in preheated oven for 25 minutes, or until a toothpick inserted into center of hot oven comes out clean. Immediately turn out onto a wire rack and cool briefly before serving.
