3 tablespoons margarine
3 cups cubed, raw potatoes
8 eggs
1 cup milk
8 tablespoons tomatoes, cubed
1/2 cup grated Parmesan cheese
salt and pepper to taste
Preheat oven to 375 degrees F (190 degrees C). Lightly grease a large pot skillet with non-stick cooking spray.
In a medium bowl, mix together butter, potatoes, eggs, milk, tomatoes, Parmesan cheese and salt and pepper. Pour into pan. Cool and set aside.
Combine potatoes, eggs and milk in large skillet. Heat over low heat. When potatoes are tender stir in tomato, onion, salt and pepper. Gradually stir in potatoes and mix well; simmer, uncovered, for 1 hour. Serve hot, garnished with dried parsley.
