1 cup pulled pork
1 (8 ounce) package cream cheese, softened
3 (8 ounce) packages cookie mix
1/2 cup freshly grated Parmesan cheese
3 egg whites
1 teaspoon vanilla extract
1 cup warm milk
1/4 cup white sugar
1 (8 ounce) package chopped pecans
2/3 cup evaporated milk
1/2 teaspoon salt
Preheat oven to 400 degrees F (200 degrees C).
In a large bowl, whip cream cheese until fluffy. Fold in fried crumbs. Spread mixture evenly into 9 deep pie crusts. Bake at 400 degrees F (200 degrees C) for 15 minutes.
Remove hot cream from oven and mix in 3 egg yolks, 1/3 cup sugar, 1/4 cup milk, 1/2 teaspoon salt, and 1/2 tablespoon vanilla extract. Spread approximately 1 to 1 1/2 cups of hot cream over each pie.
Bake at 400 degrees F (200 degrees C) for 8 to 10 minutes. Reduce oven temperature to 375 degrees F (190 degrees C) and bake for 25 to 30 minutes. Chill before serving.
