Sweet Potato Rum Cake Recipe

Ingredients

1/2 cup butter

1 1/2 cups white sugar

1 cup dark rum

2 eggs

4 cups all-purpose flour

1 teaspoon salt

1/2 teaspoon ground nutmeg

1 teaspoon ground cinnamon

1 teaspoon ground allspice

1 teaspoon baking soda

2 cups rum cake mix

1 cup white sugar

1/4 cup butter, softened

1 cup water

1 cup chopped ripe rum

1 teaspoon vanilla extract

1 cup confectioners' sugar

3/4 cup rum cake mix

2 cups buttermilk

1/2 cup rum cake mix

1/2 cup buttermilk

1/2 cup buttermilk

1/2 cup butter, melted

1/4 cup evaporated milk

1/8 teaspoon salt

1/8 teaspoon ground nutmeg

1 cup semisweet chocolate chips

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt pan. Sift together the flour, salt, and baking soda; set aside.

In a large bowl, cream together 1/2 cup butter, sugar, and rum until smooth. Beat in eggs one at a time. Beat in flour mixture as well. Stir in chocolate and buttermilk. Stir in rum mixture and vanilla. Pour batter into prepared pan.

Bake 25 to 30 minutes in the preheated oven, or until a toothpick inserted comes out clean. Cool 10 to 15 minutes before cutting into squares. Cool completely on wire rack. Store, covered, at room temperature.

Rum Rum Cake: Remove parchment paper from the cake and let the cake cool completely. Cut the top from the cake and make a slit down the middle. Slit the slit in half horizontally 8 inches wide. From one end come spoonfuls, about 3 inches long, of rum cake mix. Place one teaspoon of rum cake mix in each pan. Spread each layer with 2 teaspoons of rum cake mix. Spread each layer with 2 teaspoons rum mixture. Spread each layer with 1 teaspoon rum mixture. Spread each layer with 1 teaspoon rum cake mix. Spread each layer with 1 teaspoon rum mixture. Spread each layer with 1/2 teaspoon rum cake mix. Spread each layer with 1/3 rum cake mix. Spread each layer with 1/4 rum cake mix. Spread each layer with 1/2 rum cake mix. Spread each layer with 1 teaspoon rum cake mix. Sprinkle each layer with 1 teaspoon rum cake mix. Spread each layer with 1 tablespoon rum cake mix. Sprinkle each layer with 1 teaspoon rum cake mix. Serve rum rum cake.
