1 (4 ounce) can crushed pineapple, drained
3 cups water, divided
1 cup dried cranberries
1/2 cup white sugar
1/2 cup distilled white vinegar
1/4 cup packed brown sugar
1/2 teaspoon ground cinnamon
In a saucepan, combine pineapple, water, cranberries and sugar. Bring to a boil; reduce heat to low and simmer, uncovered, for 1 hour. Stir in vinegar and brown sugar, and add cinnamon and fresh ginger.
