1/2 cup all-purpose flour
2 tablespoons olive oil
1 teaspoon salt
1 pound boneless, skinless chicken breast halves - cubed
1 cup Parmesan cheese
Preheat oven to 375 degrees F (190 degrees C).
In a medium bowl, combine flour and olive oil; stir to coat. Sprinkle salt over flour coating.
Line bread circles 3/4-deep with flour. In a medium bowl, whisk together Parmesan cheese and 1 whole cup of flour.
Bake bread circles for 20 minutes or until lightly browned. Cool before serving.
