2 pounds crawfish steaks
1 small onions, peeled and chopped
1/2 green bell pepper, chopped
1 tablespoon garlic powder
1 cup water
4 leaves fresh spinach, finely chopped
1/2 green bell pepper, finely chopped
3 petals of fresh mint, finely chopped
1/2 tablespoon lemon juice
1 pinch ground black pepper
ground black pepper to taste
In a large pot, combine crawfish, onion, green bell pepper, garlic powder, water and spinach and bring to a boil. Reduce heat to medium-low and simmer. of hot water, balance by adding sage, lemon juice, and pepper. Simmer, covered, 60 to 90 minutes, until perfect. Serve steaks with hot sauce in a bowl.
I didn't know how to make it, so I went to a library and found this recipe. I followed the recipe exactly, but I think I would have made smaller portions. I would have liked to see how it would have turned out if I made it more food. The recipe calls for 2 egg yolks, which I did use, but it is quite a bit too sweet, and I don't think it would have added nearly enough. My results were pretty disappointing, so maybe next time I will use full strength lemon juice--I've tried it, and it doesn't seem to be effective.
