2 tablespoons olive oil
2 tablespoons honey
1 teaspoon dried thyme
1 teaspoon dried basil
2 cups cooked and mashed sweet potatoes
2 onions, chopped
2 tomatoes, chopped
1 tablespoon dried carrots
1/2 teaspoon ground black pepper
1/2 teaspoon salt
1 1/2 cups dry white wine
1 1/2 cups water
salt and pepper to taste
Heat oil in a large saucepan over high heat. Saute sweet potatoes and onions in hot oil until tender. Stir in tomatoes, first and last, pepper, salt and pepper. Bring to a boil. Reduce heat to low, cover and simmer 20 minutes, until potatoes break down and broth is absorbed.
