1 1/3 cups whole wheat flour
1 cup raisins
1/2 cup shortening
1/4 cup packed brown sugar
1 egg
1/4 cup water
1 teaspoon vanilla extract
1/4 cup quick-cooking oatmeal
1 teaspoon almond extract
In a large bowl combine flour, raisins, shortening and brown sugar and store in the fridge or freezer overnight.
In the bowl of a mixer with additional 1/2 cup water, combine egg, 1/4 cup water and vanilla extract. Beat until smooth. Stir in oatmeal, almond extract and oats. Add egg mixture and vanilla ingredients.
Pour into mold or 2 quart casserole dish. Refrigerate overnight or overnight.
