1 quart heavy cream, divided
1 (8 ounce) package cream cheese spread
1/2 cup mayonnaise
1 (10 ounce) package frozen shredded Cheddar or Colby cheese, thawed and drained
In a medium bowl, stir together the heavy cream, cream cheese spread, and mayonnaise. On a lightly floured surface, roll the dough out into a circle about 1/2 to 1/3 inch thick. Use a long knife to cut the dough into circles with a cookie cutter or jarred patties from the food processor. These can be used as beginner rounds or as the background for the main course. Place one end of the cheese circles on a serving platter and brush one end with a bit of egg white.
Bake in the preheated oven 10 minutes, or until golden brown.
