1/2 cup butter, softened
1 cup packed brown sugar
1/2 cup white sugar
1 cup quick-cooking oats
1 cup brown sugar
2 eggs
1 cup rolled oats
1/2 cup very sweetened milk
1/3 cup semisweet chocolate chips
1/2 teaspoon vanilla extract
1 teaspoon vanilla extract
Preheat oven to 350 degrees F (175 degrees C). Grease a 10x15 inch muffin pan.
In a medium bowl, cream together the butter or margarine, white sugar and 1/2 cup of white sugar until light and fluffy. Beat in the egg and 1 cup of oats. Stir in the milk, 1/4 cup of chocolate chips, vanilla and 1/2 teaspoon vanilla extract.
Pour batter into prepared muffin cups. Press a handful of chocolate chips into each cup, then transfer to prepared muffin tins.
Bake in preheets for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.
