2 cups diced acid-packed whole wheat
1 cup frozen chopped spinach, thawed and drained
3 eggs mixed
2 large carrots, peeled and cut into 1 inch pieces
2 stalks celery, diced
6 cups water
1 (20 ounce) can crushed pineapple, with juice
1 (10 ounce) can cream-style sweetened condensed milk
1/2 cup chopped dried apricots
1/2 cup fresh orange rind
1/2 cup chopped pecans
1/2 cup chopped pecans
salt and pepper to taste
In a large saucepan, combine the whole wheat, spinach, eggs, carrots, celery, water, pineapple juice, condensed milk, undiluted pineapple, and 3 cups orange juice. Heat until just boiling. Add the pecans and pecans; simmer for 5 minutes. Serve warm.
