2 cups quick-cooking nonfat milk
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking soda
1/4 teaspoon ground cinnamon
3/4 cup butter, softened
1/2 cup white sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cups well-blended shortening
1 tablespoon honey
1/2 teaspoon ground cinnamon
Preheat oven to 400 degrees F (200 degrees C). Line standard pan or casserole baking sheet with foil.
In a large bowl, mix together nonfat milk, flour, salt and baking soda. Dissolve nuts in milk. Stir in butter or margarine; milk mixture will splash. Stir egg, vanilla and cinnamon. Pour mixture into prepared baking sheet.
Bake in preheated oven 15 minutes. Reduce heat to 350 degrees F (175 degrees C) and bake an additional 35 to 45 minutes, until crust is set and knife inserted into center comes out clean.
To make fluffed topping: In a medium bowl, combine 1 cup sugar, 1 egg, vanilla extract, sugar mixture, 1 teaspoon cinnamon and 1/2 teaspoon cream cheese; pip until smooth. Frost pie with topping.
