1 (9 inch) prepared graham cracker crust
2 (8 ounce) packages cream cheese, softened
2 eggs, beaten
1/2 teaspoon vanilla extract
2 tablespoons grated lemon zest
1 1/2 cups confectioners' sugar for rolling
Preheat oven to 375 degrees F (190 degrees C).
In a large mixing bowl combine cream cheese, eggs, and lemon zest. Beat until smooth and pour into crust.
Roll out confectioners' sugar and cut into small squares 1/3 of the way thick. Roll each square into a 6-inch circle, then into a flowery crescent, then into a 9-inch circle.
Bake in preheated oven for 35 to 40 minutes, or until a toothpick inserted into center comes out clean.
