2 pounds carrots, chopped
2 stalks celery, chopped
1/2 cup butter
2 tablespoons salt
1 clove garlic, peeled and chopped
1/2 cup brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
4 tablespoons red food colour
Preheat oven to 425 degrees F (220 degrees C). Peel carrots and place in a shallow baking dish.
In a medium bowl, mix together butter, salt, garlic, brown sugar, cinnamon and nutmeg. Add carrots and milk, mix until all ingredients are completely combined.
Stir carrots, celery and butter into vegetable mixture, then stir in salt and garlic.
Place carrots into a shallow baking dish, then cover with foil and bake in preheated oven for 1 hour.
Heat oven to 400 degrees F (200 degrees C) and bake for 10 to 15 minutes, or until carrots are tender.
