1 tablespoon vegetable oil
4 patties of diced pork
2 tablespoons paprika
1 clove garlic, crushed
2 teaspoons white sugar
1/4 teaspoon ground black pepper
4 ounces candied pineapple - peeled, cored, and finely chopped
4 ounces sweet potatoes, peeled and cubed
2 tablespoons lime juice
4 stalks celery, chopped
2 1/2 pounds short ribs
1 (20 ounce) can condensed beef soup
1 tablespoon red wine vinegar
Heat oil in a large skillet over medium heat. Brown pork in hot oil; drain excess fat. Preheat oven to broil.
In a medium bowl, stir together paprika, garlic, sugar, pepper and vinegar. Place pork, pineapple, potatoes, lime juice, celery, vegetables and meat cubes in a medium bowl. Mix well.
Transfer pork mixture to a medium saucepan and stir in reserved pineapple juice, wine vinegar and reserved prepared pineapple. Simmer over medium heat until mixture is thickened and smooth.
