1 (8 ounce) package cream cheese, softened
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup grated Parmesan cheese
1/4 cup grated pepperoni sausage
1 (8 ounce) package uncooked fettuccini
3 eggs, beaten
1 cup milk
1/2 cup grated Parmesan cheese
Preheat oven to 375 degrees F (190 degrees C).
In a medium saucepan over medium heat, combine cream cheese, salt, pepper and crumbled Parmesan cheese. Cook, stirring occasionally, until mixture is thick and creamy. Heat through, about 2 minutes.
Meanwhile, bring a large pot of lightly salted water to a boil. Mix in pasta and cook for 8 to 10 minutes or until al dente; drain.
Combine sausage and fettuccini in a medium bowl. Add eggs one at a time, and stir in milk, 1/2 cup Parmesan cheese, and one egg at a time, until desired consistency is reached. Spoon into fettuccini, and sprinkle with grated Parmesan cheese.
Heat through, and serve.
