16 ounces taco seasoning mix
1/2 cup chopped fresh tomato
1/2 cup chopped onion
1 teaspoon minced garlic
1/4 teaspoon salt
1 (10 ounce) can whole kernel corn, drained
1 (1 ounce) can sliced ripe olives, drained
1 tablespoon chopped fresh parsley
2 teaspoons minced fresh chives
1 (8 ounce) can cream-style corn tortillas
Place taco seasoning mix, tomato, onion, garlic, salt, corn and olives in a 2-quart saucepan. Over medium heat, cook, stirring frequently, until liquids are reduced and mixture thickens. Remove from heat. Mix in tortillas, cover and refrigerate. Serve warm.
