1 cup butter
1 cup packed brown sugar
2 eggs
2 1/2 cups pumpkin puree
1 1/2 cups milk
2 tablespoons all-purpose flour
2 teaspoons vanilla extract
1/2 teaspoon pumpkin pie spice
1/2 teaspoon ground nutmeg
1/2 teaspoon garlic salt
Preheat oven to 375 degrees F (190 degrees C). Grease and flour two 9 inch pie pans.
In a large mixing bowl, cream together the butter, brown sugar and sugar; beat in the eggs, pumpkin and milk. Add the flour, vanilla, pumpkin pie spice and nutmeg. Mix until well blended. Pour batter into prepared pans.
Bake in preheated oven for 45 minutes, or until a toothpick inserted into center of top comes out clean. Cool in pan on wire rack. Serve at room temperature. Garnish loosely with pumpkin-stuffed coriander rim.
