1/2 cup margarine
1 cup white sugar
1 cup instant vanilla pudding mix
2 eggs
1/2 cup milk
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups all-purpose flour
1/4 cup butter
1/4 cup milk
2 cups white sugar
2 teaspoons lemon juice
1 1/2 teaspoons lemon zest
1 teaspoon vanilla extract
1 cup chopped chocolate
Beat margarine and 1 cup sugar in large bowl until smooth. Mix together the pudding mix and eggs; stir into margarine mixture, stirring evenly.
Beat flour into margarine mixture using hands or spoon. Stir in the 2 cups sugar, baking soda and salt. Gradually mix in the flour mixture. Gradually stir in the flour mixture, mixing until blended. Stir in the 1 1 cup milk, lemon juice and lemon zest. Pour into prepared pan.
Bake uncovered at 350 degrees for 50 to 55 minutes or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in pans for 10 minutes, then turn out onto a waxed paper lined cookie sheet. Cool completely before cutting into squares.
