4 tablespoons vegetable oil
1 cup chopped mushrooms
1/2 cup chopped onion
3 tablespoons lemon juice
1 teaspoon ground black pepper
1 teaspoon oyster sauce
1 medium head apple - peeled, cored and cut into 1/2 inch pieces
1 cup sliced bananas
1 cup sliced carrots
4 cups rolled oats
4 cups mini muffins
1 cup skim milk
Heat oil in a large skillet over medium heat. Saute mushrooms in oil; stir in onion, lemon juice, ground black pepper and boiling water. Reduce heat to medium; cook and stir 2 minutes.
Add mushrooms, sliced onion, banana, peeled carrots, bananas and carrots; mix well. Cook and stir ¾ cup milk. Stir for 6 minutes.
I followed the recipe exactly making no changes and these were amazing! There was no dressing on hand so I used plain old Tom's (had to go to school), which was perfect. Heated 2 tbsp of the dressing and used the rest to garnish. Brilliant!
