1 (10 ounce) package frozen chopped spinach, thawed
1 cup chopped onions
1 cup chopped fresh mushrooms
1 (8 ounce) can tomato paste
3 cups chicken broth
1 teaspoon salt
1 tablespoon white sugar
1 pound bacon
1 (16 ounce) package instant mashed potato mix
1 (6 ounce) can tomato paste with green chile
1 tablespoon chopped green onions
2 tablespoons butter
In a large pot over high heat, combine spinach, onions, mushrooms, tomato paste and chicken broth. Bring to a boil. Add salt, sugar, bacon, potato mix and tomato paste with green chile. Bring to a boil. Reduce heat, and simmer 15 minutes.
Stir cooked meat mixture into vegetables and kale mixture and stir thoroughly.
Stir butter mixture into soup and stir just until mixed. Return pot to a boil. Reduce heat, and simmer 5 minutes more, or until liquid is reduced to 1/4 cup.
