2 eggs
1 (15 ounce) can sweetened creamer
2 bananas
3 tablespoons corn syrup
1 1/2 cups white sugar
1 teaspoon instant vanilla pudding mix
1/2 cup milk
1/2 cup strawberry jam
3 egg yolks
1 teaspoon lemon zest
1 teaspoon lemon zest
2 cups chocolate chips
1 cup chopped pecans
In a large bowl, beat eggs until frothy. Stir in creamer and bananas.
In a medium bowl, combine sugar, pudding mix, milk, strawberry jam, egg yolks and lemon zest. Mix well.
Pour creamer mixture into 12 muffin cups or individual containers. Cover and refrigerate until set.
When ready to serve, pour streusel over stuffed cups. Serve warm.
