1 (4 pound) whole chicken, diced
1 medium onion, diced
1/2 cup chopped celery
1/2 cup chopped onion
1 cup butter
1 cup fresh lemon juice
2 teaspoons Italian seasoning
1 teaspoon dried basil
1 teaspoon dried parsley
1 teaspoon dried oregano
1 teaspoon dried rosemary
salt and pepper to taste
3 tablespoons olive oil
4 cups diced Italian sausage
1 (4 ounce) can sliced mushrooms, drained
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, gently mix chicken, onion, celery, onion, celery, onion, celery, celery and 1 cup butter ingredients. Place chicken in a baking dish. Brush with lemon juice, Italian seasoning, basil, parsley, oregano, rosemary and salt and pepper. Pour chicken mixture into a 4 quart casserole dish, and top with sausage and mushrooms.
Bake uncovered at 350 degrees F (175 degrees C) for 20 to 50 minutes or until chicken is cooked through and juices run clear.
