2 tablespoons olive oil
1 medium onion, sliced
2 cloves garlic, minced
2 cups chopped fresh mushrooms
2 teaspoons paprika
1 1/2 cups water
1 1/4 cups plain yogurt
3 3/4 tablespoons butter
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon salt
3 1/2 cups chopped spiced zucchini
In a medium saucepan, mix olive oil, onion, garlic, mushrooms, paprika and water.
Bring to a boil, stirring to break up clumps. Stirring constantly, bring mixture to a boil, stirring occasionally, approximately 5 minutes. Remove from heat and add yogurt, butter, crushed red pepper flakes and salt, stirring until well blended. Stirring well after each addition, return mixture to a boil. Boil, stirring constantly, for 10 minutes. Remove from heat and pour mixture into glass jars with lids. Allow jars to cool to room temperature.
