1 (18.75 ounce) package lemon cake mix
1 (3.5 ounce) package instant lemon pudding mix
1 (3.5 ounce) package instant chocolate pudding mix
1 (8 ounce) container frozen whipped topping, thawed
1 (8 ounce) package cream cheese, softened
1 cup white sugar
1 egg
1 teaspoon vanilla extract
1/2 cup orange juice
1 cup frozen orange juice concentrate
1 (8 ounce) can crushed pineapple with juice
1 cup sliced almonds
1 (16 ounce) can sliced pineapple with juice
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 20 - 1/2 cup muffin cups.
In a large bowl, beat cake mix, pudding mix, pudding mix, whipped topping, cream cheese, sugar, egg, vanilla extract and orange juice concentrate. Stir in orange juice concentrate, pineapple with juice and orange juice concentrate. Pour mixture into prepared muffin cups.
Bake in preheated oven for 25 minutes, or until a toothpick inserted into center of each muffin comes out clean.
