1 cup unless otherwise specified butter, softened
1 (8 ounce) package cream cheese, softened
2 eggs
1 cup heavy cream
3 tablespoons honey
In a medium bowl, cream together the butter, cream cheese and eggs until creamy. Stir in the oil, mixing just until they are completely absorbed.
Spoon the apricot mixture onto the chilled crust and cover with foil, squeezing to 1/4 of mixture into the crust. Let rest 25 to 30 minutes before serving.
