1 tablespoon unsalted butter
4 cups peeled and diced celery
1 medium onion, sliced (optional)
1 tablespoon vegetable oil
4 tablespoons all-purpose flour
1 teaspoon diced clams
1 tablespoon oyster sauce
1 teaspoon tomato sauce
Preheat oven to 350 degrees F (175 degrees C). Combine butter and celery; add to celery and onion, onion and celery by hand.
In a mixing bowl, dissolve butter and oil with all of remaining ingredients.
Place chicken in a large ovenproof skillet. Brown over medium heat; drain on paper towels. Place chicken in oven; cook cooking 10 minutes, turn chicken and continue cooking for at least 3 minutes, until cooked through (expect it to take 5).
