More Mackerel Recipe

Ingredients

1/4 cup all-purpose flour

1 teaspoon baking powder

1 cup margarine

5 tablespoons milk

salt and pepper to taste

1 (8 ounce) can mackerel, drained

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a large bowl, cut the flour into the margarine. Stir the milk with salt and pepper into the melted margarine. Pour the flour mixture into a 9x13 inch pan or ziplock bag. Sprinkle the mackerel over the top of the flour mixture.

Bake uncovered in the preheated oven 1 hour, or until surprisingly tender and crisp, about 40 minutes. Cool completely, and serve.

I followed the recipe exactly making no changes and these were amazing--my husband complained when they were all gone. My only warning would be to be careful about the soy sauce component as it can be dangerous.
