1 vanilla wafer cookie
1 cup butter
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
2 cups flaked coconut
1 cup chopped pecans
1 cup semisweet chocolate chips
3 tablespoons butter
1/2 cup brown sugar
3 tablespoons light rum
1 tablespoon confectioners' sugar, or to taste
Preheat the oven to 375 degrees F (190 degrees C).
In a medium bowl, cream together the white sugar and margarine until light and fluffy. Mix in the eggs and vanilla until well blended. Stir in the flour; mix well. Combine coconut, pecans, brown sugar, butter, brown sugar and rum. Shape the mixture into a 1/2 inch thick. Spread over the cookie mixture. Roll the coconut into 1/2 inch balls. Place them onto ungreased cookie sheets.
Bake for 10 minutes in the preheated oven, or until lightly browned. Remove from baking sheet to cool on wire rack.
