1 onion, chopped
2 stalks celery, chopped
3 cloves garlic, minced
1/2 teaspoon salt
3 (1 ounce) packages chili seasoning mix
1 (14 ounce) can black beans, seeded and drained
1 (2.5 ounce) can peeled and diced tomatoes with juice
3 tablespoons butter
1 teaspoon prepared horseradish
salt and pepper to taste
Heat oil in a large skillet over medium heat. stir in onion, celery and garlic; saute for 2 minutes.
Add salt, chili seasoning, baking soda, baking powder, and salt and pepper to taste. Reduce heat to low. Cover skillet, and simmer for about 45 minutes.
This was OK -- I added 2 tablespoons of worcestershire sauce and the green chilies to give it an added touch.
It's all in the spice profile. I like Indian food based around spices like chili powder and cardamom, so I used local spices for the main dish. Next time I might add some spices throughout, but it was good =)
