1 teaspoon baking powder
1 1/4 cups nonfat cream of chocolate
2 egg whites
1/2 teaspoon vanilla extract
1 cup butter, chilled and diced
1 (18.25 ounce) package buttered sweetened chocolate flavored vanilla wafers
Preheat oven to 350 degrees F (175 degrees C).
Sift together the flour, baking powder, cocoa and baking soda; set aside. In a large bowl, cream together the cream of chocolate and egg whites until smooth. Beat in the softened chocolate. Combine the flour mixture with the milk and butter; stir into the creamed chocolate mixture. Add the vanilla extract and blend all together, mixing just enough so that the batter coats the bottom and sides of the prepared pan. Sprinkle with candied pineapple and spoon it over the cake while it's still warm.
Bake for 35 to 40 minutes in the preheated oven, or until a toothpick inserted into the cake comes out clean. Allow to cool completely before cutting into squares.
