1 1/2 pounds potatoes, peeled
2 tablespoons olive oil
1 teaspoon white vinegar
1 teaspoon fresh lemon juice
1/2 teaspoon salt
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon dried oregano
1/4 teaspoon dried garlic
salt and pepper to taste
1 1/2 teaspoons olive oil
In a small saucepan, heat 1 tablespoon of olive oil over medium heat. Add potatoes and saute until they are golden. Remove from pan, set aside.
Place 1 tablespoon of olive oil in a small mixing bowl. Stir in vinegar, lemon juice, salt, basil, oregano, garlic and salt and pepper. Mix well and pour mixture over potatoes.
Melt the remaining 1 tablespoon of olive oil in the saucepan over medium heat. Add potatoes and cook until browned in spots, about 5 minutes.
