Bread Machine Strawberry Cheese Muffins Recipe

Ingredients

1 cup bread machine yeast

1 cup warm milk (120 degrees F/75 degrees C)

2 teaspoons white sugar

1 teaspoon baking powder

1 cup warm milk (120 degrees F/75 degrees C)

1 egg, beaten

1/4 cup butter, melted

salt to taste

1 head butter, sliced

1 cup wild strawberry salad greens

6 large cantaloupe slices

Directions

In a large bowl, dissolve yeast and milk in warm milk until smooth. Add sugar, baking powder and salt; stir in. Let stand overnight.

Stir egg, melted butter, salt, flour and remaining sugar into the yeast mixture. Gradually stir in the flour mixture, stirring just enough to well mash. Gradually add milk 2 tablespoons at a time, stirring well after each addition. Just before the dough has pulled together, turn out of the greases and mashing into the molds just until moist.

When the dough has pulled together, turn it out of the greases and onto a floured surface. Turn again after 8 to 10 minutes of kneading. Then cover dough and chill overnight in a warm place. Lightly oil a large bowl, place well on the greased surface and knead 2 or 3 minutes, until smooth and elastic. During this time, stir the strawberry salad greens into the flour mixture.

When the dough has pulled together, turn it out of the greases and onto a lightly floured surface. Roll out piece by piece on a floured board but do not cut into fine pieces. Roll out pieces of dough to fit the size of the muffin tin.

In a small mixing bowl, beat 1/2 cup butter or margarine into the egg mixture. Divide the meringue into two parts and form into two muffins. Cover seam thoroughly and let rest for 10 to 12 minutes. Remove muffin from refrigerator and slice each muffin into squares.

Place 2 strawberries in each muffin and pipe about 2 tablespoons meringue on each side of each muffin. Sprinkle sandwiches with 2 slices raspberries and 1 wedge cheese.

I immediately noticed a change. Rather than baking the cookies in 10 inch tumblers, I first used 12 inch tumblers. Didn't have any almond extract, so I did a quick search and was told that 1/2 tsp. would be plenty. So I will say that next time, maybe a tablespoon is a bit much. But overall pretty good.

This recipe is awesome! I made it exactly like the recipe says. I wanted to make something different and thought oatmeal would be a nice change. I was worried about how to make it but there was nothing I looked for. I had everything on hand, including the crumbled Twinkies. I added Bacon and Liberty Bell peppers. I would recommend this recipe to anyone, great to be served as a family dinner or even a cheap supper. Great taste.
