1 quart water
1 tablespoon vegetable oil
3 bell peppers
2 green beans, chopped
1 large onion, chopped
2 green onions, chopped
1 1/2 teaspoons salt
3 tablespoons butter
In a medium saucepan, bring water to a boil. Stir in oil, reduce heat to low, and simmer but do not boil. Heat to medium, and mix in peppers and beans.
Add onions and green onions, salt and butter. Simmer, shaking vigorously, for about 20 minutes, or until onion is tender. Toss with chicken and rice.
