1 large zucchini, cut into 1-inch pieces
1 (8 ounce) package cream cheese, chilled
1 tablespoon chopped onion
1 clove garlic, chopped
1 teaspoon salt
4 slices mozzarella cheese
2 (7 ounce) containers pizza sauce
Preheat oven to 425 degrees F (220 degrees C).
Stir cream cheese, onion and garlic into a medium bowl. Stir in salt and mozzarella. Transfer to a 9x13 inch pizza pan.
Bake in a preheated oven for 9 minutes.
While a toothpick comes out, sprinkle pizza sauce over the zucchini, and bake an additional 20 to 25 minutes.
While the zucchini juices reach boiling point, spoon pizza sauce over the zucchini. Allow to sit for 1 hour.
