4 eggs
1/4 cup white sugar
2 tablespoons lemon juice
1 teaspoon vanilla extract
1 teaspoon lemon zest
4 cups sour cream
4 cups pecans
Preheat oven to 450 degrees F (225 degrees C). Grease and flour three 9 inch pie pans.
Place eggs in a separate shallow bowl. Stir lemon juice, lemon zest and sugar into eggs until completely dissolved. Remove from refrigerator; transfer to one second shallow bowl. Beat sour cream into egg mixture. Beat pecans into egg mixture. Pour mixture into prepared pans.
Bake in preheated oven until golden, about 35 minutes. Cool slightly before removing pie from pans. Cool completely before cutting into squares, or chill overnight.
