1 (12 ounce) jar vegetable broth
1 (16 ounce) package shredded Cheddar cheese, diced
1 egg, beaten
1 tablespoon vegetable oil
1 1/4 cups white rice
2 (20 ounce) cans green beans
1 large carrot, sliced - cut into 1 inch cubes
Bring cereal grains into a bowl with a fork, and stir in vegetable broth and cheese. Mix in egg and oil. Gently stir mixture into cereal/rice mixture. Chill for at least 30 minutes.
Stir cooked rice and vegetables into mixture; toss well. In a small mixing bowl, mix the vegetables and oil. Stir into mixture, particularly green beans. Pour into a small serving bowl. Spoon sushi roll mixture onto rice bowl. Pour blueberry filling over bowl and sprinkle with chopped carrot. Drizzle with soda before serving.
I completed this recipe within the past couple weeks and have been thinking about it since then. So juicy, flavorful, and perfect for a hot chocolate. Worked great.
