2 1/2 cups white sugar
1 teaspoon vanilla extract
1 (19 ounce) can crushed pineapple
1 cup butter, softened
1 (8 ounce) package cream cheese, softened
2 eggs
1 (4 ounce) can lemon juice
1 cup milk
1 1/2 cups cooking brown sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup white sugar for decoration
In a large bowl, mix together the pineapple, butter, cream cheese, eggs and lemon juice. Let stand 30 minutes. Beat in white sugar until thickened. Stir in milk and brown sugar slowly. Beat in brown sugar, 1/2 cup at a time, until all sugar is used.
Pour batter into prepared pan. Bake in preheated oven for 30 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool completely before removing from pan.
