1 (11 ounce) can mixed vegetables with liquid
1 (10 ounce) can crushed pineapple with juice
2 tablespoons chopped pecans
1 1/2 cups flaked coconut
In a large bowl, mix together mixed vegetables, pineapple, pecans, and coconut. Shape slotted spoonfuls into 1-gallon containers and refrigerate.
Preheat oven to 350 degrees F (175 degrees C).
Place fruit mixture in a shallow dish or bowl and place pineapple in the shallow dish. Sprinkle with pecans and coconut. Roll up tightly and seal tightly. Place over nonstick baking sheets.
Bake in preheated oven for 30 minutes, or until fruit is tender.
