Old-Time Bread Recipe

Ingredients

1/2 teaspoon active dry yeast

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

2 eggs, lightly beaten

1 teaspoon dried bread crumbs

1/2 teaspoon ground cinnamon

1 cup warm milk or water

1 cup bread flour

2 teaspoons yeast extract

Directions

Place yeast, salt, pepper, eggs, bread crumbs, cinnamon and milk into the pan of the bread machine in the order recommended by the manufacturer. Select cycle; press Start.

When the dough has pulled together, turn it out onto a dry surface and let rest for 10 minutes. Lightly oil the large bowl of a double boiler or electric bread machine bowl.

Place the dough in the dry bowl and turn to coat with oil. Cover the bowl with aluminum foil and place in a warm place to allow rise to 1 hour.

Meanwhile, while the yeast is resting, bring 2 cups warm milk or water to a boil in a small bowl. Add the yeast mixture and bring to a boil. Boil a little at a time, adding milk slowly, until the yeast is fully formed.

When the dough has risen, turn it out onto a lightly floured surface. Divide the dough into two equal pieces and shape into loaves. Place the loaves into a greased 9x5 inch loaf pans and cover with muffin tins.

Bake the loaves in a preheated oven for 1 hour, turning once, until the loaves are golden brown. Remove them from pans and let cool on a wire rack. Heat the remaining 2 tablespoons of butter in a skillet over medium heat. Dip the loaves in the butter and place them onto a warm plate. Spoon the warm milk and 1/2 cup sugar over the loaves, then sprinkle with remaining 1/2 cup sugar.
