1 fruit
1/2 cup butter
1/2 cup white sugar
1 egg
1 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
1 teaspoon vanilla extract
In a bowl, cream together the butter, sugar and egg until smooth. Beat in the flour, salt and baking powder. Continue blending until smooth. Mix the remaining 1/2 cup of flour into the creamed mixture just until incorporated. Shape the dough into a ball and roll into a 10 inch round. Place into the greased jelly roll pan. Chill overnight.
Preheat oven to 350 degrees F (175 degrees C). Fill jelly roll pan with foil. Spread the fruit evenly between the 2 layers of foil. Roll the fruit around the foil edges to seal. Place the fruit on a large baking sheet. Brush top of foil with butter.
Bake in preheated oven for 40 minutes, or until fruit is tender. Let cool on baking sheet for 15 minutes. Transfer fruit to a medium bowl and cool completely.
VERY, VERY disappointing !! Chips & salsa are great - I used raisins more for variety.
