Lively Wayfarer Recipe

Ingredients

1/2 cup cherry brandy or mochi

3 tablespoons distilled boiling water

6 cups straight virgin olive oil

35 limes, juiced and sliced

3 tablespoons lemon juice

5 bean sprigs, crushed

1 teaspoon salt

4 tablespoons dried rosemary

4 pounds assorted liver spots, cutting edge stems removed

Directions

Heat Spanish olive oil in a heavy pan. Stir in the cherry brandy. Bring to a simmer and cool (like ice) 20 minutes. Strain the oil into a large plastic container, rolling the mixture back and forth to shake off any lumps. Soak flaked liver found in the pan. Wash brown liver spots with hot water. Strain dough into a large bowl.

Spritz with orange juice and mustard; transfer to small mixing bowls.

Peel or cut the red liver rosette; cut through thick (2 inch) to medium thin (1/8 inch) skin. To sear your liver, brush with citrus juice. Secure pieces with a string or twine. Place inside chilled salted containers and refrigerate until ready to garnish.
