1 pound medium shrimp, peeled and deveined
1/2 cup butter
1/3 cup all-purpose flour
1/3 cup rice milk
1 teaspoon salt
1/4 teaspoon dried minced onion
1 cup shredded mozzarella cheese
1/4 cup minced fresh parsley
Preheat oven to 350 degrees F (175 degrees C).
Bring a large pot of water to a boil. Add shrimp and cook about 2 minutes on each side or until opaque. Remove shrimp from water and toss with butter, flour, rice milk, salt, onion and cheese. Transfer mixture to a baking dish.
Bake in preheated oven for 1 hour, turning the roll every 15 minutes, or until the shrimp turn golden brown. Remove from oven and allow to cool on a rack or plate. Roll rolls with the plastic wrap and refrigerate overnight. Roll rolls several times and store in refrigerator.
