6 onions, chopped
1/3 cup olive oil
4 cloves garlic, minced
3 medium tomatoes, chopped
3 (14 ounce) cans diced tomatoes with juice
2 cups water
1 cup honey, divided
1 teaspoon dried oregano
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried basil
4 cups chopped spinach
In a medium saucepan, heat 2 tablespoons olive oil over medium low heat. Saute onions over medium heat for about 30 minutes, until tender.
Meanwhile, in a small saucepan, heat 2 tablespoons olive oil over medium heat. Saute garlic and tomatoes over medium heat for 5 minutes. Stir tomato mixture just until warmed through.
In a large saucepan, heat 2 tablespoons olive oil over medium heat. Bring olive oil to a boil, then stir in tomatoes, onion and garlic. Bring to a full boil, then add water, honey, oregano and crushed red pepper flakes. Bring to a boil, then add spinach. Reduce heat to medium, cover and simmer 15 minutes, stirring frequently.
Or make your own Italian style pasta sauce and stir 1/2 cup olive oil into a small bowl. Place 1/2 cup spinach over the tomato mixture, and serve hot with a dish or spoon.
