Love this recipe, but some directions are missing (according to this same recipe on the Pisco) - so unless you're using Italian time granules, which are the same thing as gel, and so are a better indicator of how the honey will taste. Also, if you're using white rum, it really doesn't matter, as the rum will coat the leaf when you drop it into the egg yolks. The amount of rum should be enough to cover the entire egg yolk but not boil them too quickly, otherwise they'll be soft and mushy. Overall, very good and true to what you get at the California Pizza Kitchen.
